I love baking bread. Just this week a friend was remembering when our children were small and I baked the week’s bread every Wednesday. She told my husband she always made sure to come over on Wednesday for hot bread and butter. I didn’t use a bread machine and found the kneading a Zen activity. I got a hand-me-down bread machine and used it for a while but missed the meditative rhythm of hand making bread.

Then, several years ago I discovered my long standing digestive issues were from a severe gluten intolerance. Now, baking bread would be torture because I can’t eat it! GF bread can’t hold a candle to wheat bread. But, I am thinking of trying some sour dough bread made with heritage wheat and see if I tolerate it. I have read that less hybridized wheat strains are often tolerated by those with gluten sensitivities.

Loved this piece. It makes me want to go bake bread for my husband even if I can’t eat it! 😊
